Thanks for being here today!  This is so unlike me to share anything consumable.  It’s actually my first (and probably last) time.  I’m a horrible cook, I don’t bake, and really have no desire to learn.  But these are just too good not to share!  The other day it was hot (which here in Portland is like 75) and I really wanted something to cool me off.  A few weeks prior, on a whim, I bought the Trader Joe’s cold brew coffee concentrate and my husband and I both loved it!  We made iced coffee drinks and they were delicious!  I love that you can mix in different things to your liking.  I had some left and I thought, why not make some ‘adult’ popsicles?!  Now, I don’t mean ‘adult’ in the alcohol sense, just in the don’t give them to your toddler…too much caffeine sense.  Ha!

These are super easy and VERY delicious!  First I will share the “Coffee Popsicle” and then I will share the “Coconut Mocha Popsicle”.  It’s on the sweeter side but it is GOOOOD!!

You will need:

-Trader Joe’s Cold Brew Coffee Concentrate

-Milk (or water will work too but it’s not as good)

-Sweetener (of choice)

For the Coconut Mocha Popsicle you will also need:

-Coconut Syrup

-Chocolate Sauce

Coffee Popsicle

My molds were aprox. 4 oz. each so this recipe is for Four 4 oz. popsicles (with a tiny left over).  Or for the main ingredients it’s 1 part coffee to 2 parts milk.

Ingredients

-2/3 C. Coffee Concentrate

-1 1/3 C. Milk (or water)

-Sweetener to taste

Directions

  1. Combine all ingredients in a medium mixing bowl.
  2. Mix well and poor into popsicle molds.
  3. Follow instructions of your individual molds and place in freezer.
  4. Wait until frozen and enjoy!

Okay, now for the Coconut Mocha Popsicle!

I really hope you get a chance to make these.  They are so good and so refreshing!  My husband just got done with yard work and he’s enjoying one right now!  Try different combinations of syrups and flavors.  Just remember, if it tastes super strong before you put it in the mold, that’s okay.  When it freezes it won’t taste as strong.  Have a great day and we’ll see you next time!
